Meat processing: level indicators suitable for each phase of the process

In Italy 2.6 million tons of meat are sold and consumers bring about 76 kg of meat to the table per year. The meat processing industry has high hygiene requirements in all stages of the industrial process, starting with rearing. It is essential that the tools in contact with feed are suitable for food processing. And just like in the production of beer, it is essential that the level indicators are FCM certified and suitable for the detection of solids such as flour and grains.

1. Handling and storage in the farm

The meat processing process begins with the rearing of animals, with an intensive or extensive method chosen according to the species raised, the economic resources and the spaces available in the area.

A contextual phase of the rearing is the feeding of the animals through feed stored in silos and subjected to regular checks. The substances administered, in fact, can remain in the meat and, if harmful, represent a risk for the consumer. It is therefore essential that all parts of the process that come into contact with feed are also suitable for contact with food.

For such applications, CAMLogic offers various FCM certified instruments, such as the PFG05, PFG57 and PFG09 rotary level indicators, as well as the PFG06 capacitive sensor, all suitable for the detection of solids such as flour and grains. The selected feeds allow the livestock to reach the correct weight and be ready for slaughter, which is usually carried out in special facilities, under the control of veterinary staff who ensures the health of the animals.

2. Handling and storage in the meat processing

Once this phase is complete, the meat goes to a distributor or cutting plants where portioning takes place. The cuts of meat thus obtained go towards the last phase, called "transformation", where they can take two different paths:

  • they are sold to restaurants and butchers;
  • they are purchased by companies to obtain minced meats, sausages, hamburgers and salty products such as hams.

During the various stages of meat processing, waste is produced, which in turn is reintroduced into a production process. In some cases they are used to produce flours of animal origin, in others they follow a parallel process consisting of storage tanks, digesters and hoppers to use the waste as raw materials for the production of biomethane and biogas.

In such cases as well, the process can be automated through the installation of CAMLogic level indicators for liquids, such as the CLR20, made with all parts in contact in AISI 316 stainless steel and applicable in contact with all liquids, even with pH <4.5 and foamy.
